Perini Ranch Tenderloin


Preheat oven to 475 deg
Remove fat and silver skin from tenderloin. Brush the meat with olive oil and completely coat the tenderloin with Perini Ranch Steak Rub. Insert a meat thermometer. Place in oven for 10 minutes at 475,; lower the oven temp to 425 and continue cooking for about 20 - 25 minutes or until the termometer reads 130 (for medium rare).

Remove the tenderloin from the oven and let it stand for 10 minutes before slicing. Do not overcook.
